Get ready for one of the most unique hikes you will ever take! Every step we take will be a learning experience about the species of plants we have around us. We will take a hike around at Roaring River State Park. This area has hundreds of species of edible plants, fungi and trees. Many are native, quite a few are invasive, all of which are naturally occurring and edible. We will identify 20+ wild edible trees, shrubs, fungi, and plants learning how to locate them on your own property. We will discuss how and when to harvest, as well as the uses of the plants as medicine and food. We will also discuss culinary, survival and medicinal uses of each plant we focus on. Our goal is to open your eyes to the amazing local foods available on anyone’s property, forest, river bed, and even back yard. You will see most plants multiple times throughout the hike. Mid-April we’ll be in for corn salad, wild ginger, spicebush, garlic, mints, maple seeds, goldenrod, wild ginger, nettle, mustard’s, and more.
After the hike we will share stories, laughter and great craft beer. Hungry Hollow Brewing is a wood fired steamed brewhouse in the heart of the Ozarks. Come for the beer, but stay for the setting and people. Sample the beer and snacks before we head back to Springfield where you can start planning your own foraging trip!
Rachael West is a Wild Edibles Educator and the Kitchen Manager for Springfield Community Gardens. She has worked for Bass Pro's Roaring River State Park, Springfield Herb Society, Springfield Master Naturalist, the Missouri Master Gardeners, all focused on Wild Culinary here in the Ozarks. She supplies local restaurants with wild edibles, wild teas, and foraged value added products year around.
